Remember those rice noodles I featured last week? Well, this week I’m letting you know my thoughts on them.
I’ve been testing out different gluten-free noodles for a couple months now. They cook in about the same time as regular noodles, but once they’re done… they’re done and there’s no room for error. So, that being said, I have a tendency to over cook them.
The brown rice noodles I purchased at Trader Joe’s are so far my top contender. They were done in about 8 minutes and didn’t get too sticky (if you’ve ever cooked gluten-free noodles you’ll know what I mean by this).
I added half a teaspoon of butter to try and combat the stickiness, but thats’s optional.
Once the noodles were done, I dumped them into a strainer in my sink. At that time, I added a small can of dairy-free Alfredo sauce into the pot and let it heat up for about 3 minutes. I then dumped the noodles back into the pot and mixed them together. To finish it off, I added a lot of pepper for taste!
In total, the meal took about 15 minutes to make and I had enough for three meals! Just store the remaining noodles in an air-tight container in the fridge up to a week.
