Valentine’s Day is a day dedicated to love, in all it’s forms. Whether it’s romantic love, family love, or the love for your best friends, there’s many different ways to show and receive it. If you’re looking for a last minute gift to share with someone baking is a great option! It’s personal and delicious.
This recipe comes from my mom’s go-to dessert when I was growing up. It takes only about 5 minutes to make! It’s a classic dessert free from the top 8 allergens (milk, peanuts, nuts, gluten, eggs, etc.)
Puffed Wheat Cake
- 1/3 cup butter (or dairy-free butter, we use to use Fleischmann’s margarine or Bacel vegan margarine)
- 1/2 cup corn syrup
- 1 cup brown sugar
- 2 Tbsp cocoa
- 1 Tsp. vanilla
- 8 cups puffed wheat
Melt butter in a large pot. Add corn syrup, sugar, cocoa and vanilla. When the mixture bubbles, remove from heat. Add puffed wheat and mix together. Press the mixture into a buttered 9×13′ pan. Let sit for a few minutes* and dump the pan onto a serving plate.
*You don’t want to leave the cake in the pan for too long or else it will stick in there.
